Greek Quinoa Salad

Or at least my take on a Greek quinoa salad. :) I'm not much of a cook.  My hubby used to do all the cooking but now I do a lot more than ever.  I'm a chicken, brown rice and steamed veggies kinda girl.  Sure I love my pizza, but if I'm cooking I really like simple (hubby would say bland) foods.  So I was excited to try out something new and it was so quick, easy and delicious!  Marlow also approved.  Although if you ever feed a child quinoa I recommend putting something under the highchair.  Those tiny little pieces get ALL over!


Marinate chicken in
Olive oil
garlic (chopped)
fresh rosemary
fresh thyme
2 juiced lemons & a little zest
salt & pepper
I love the chicken grilled but I baked it this time

Saute some fresh spinach with shallots, salt and pepper.

Add cooked quinoa in a bowl, top with spinach then chicken and feta of course.  I add grape tomatoes and cucumber around the bowl.  Enjoy!

Psalm 91

this is truly changing my life...
I'm going to try and read it every morning.

I have to admit I was never really a church goer.  I mean I've made most of my sacraments and I used to go to church from time to time as a kid.  Mostly I remember holidays... especially Easter.  It's amazing how children change your life.  I sometimes wish I would've discovered the healing power and hopefulness I have found much sooner.  When trying for a baby... and things just not going in my plan, I had to learn to trust in His plan.  I hope Marlow grows up to know and accept faith.  What she chooses to do with it is her choice, but I hope to lead by example and find my strength in His word.  Coming closer God has changed my life.  It's helped me to lose fear and build trust.  Today was Bible Study... my first time... and I'm blessed to have found this new relationship with God.

Psalm 91


1 Whoever dwells in the shelter of the Most High

will rest in the shadow of the Almighty.[a]

2 I will say of the LORD, “He is my refuge and my fortress,

my God, in whom I trust.”

3 Surely he will save you

from the fowler’s snare

and from the deadly pestilence.

4 He will cover you with his feathers,

and under his wings you will find refuge;

his faithfulness will be your shield and rampart.

5 You will not fear the terror of night,

nor the arrow that flies by day,

6 nor the pestilence that stalks in the darkness,

nor the plague that destroys at midday.

7 A thousand may fall at your side,

ten thousand at your right hand,

but it will not come near you.

8 You will only observe with your eyes

and see the punishment of the wicked.



9 If you say, “The LORD is my refuge,”

and you make the Most High your dwelling,

10 no harm will overtake you,

no disaster will come near your tent.

11 For he will command his angels concerning you

to guard you in all your ways;

12 they will lift you up in their hands,

so that you will not strike your foot against a stone.

13 You will tread on the lion and the cobra;

Bracelets, Earrings, Necklace.... oh my!

While all the other children her age work on words like, "ball"... little miss tries her hardest to sputter out "necklace" "earring" and "bracelet".  Of all the number of educational toys and activities I try with her, she always turns to a piece of jewelry.



Peek-a-boo... hiding behind the curtains.  She yells..."Rahhh!" to try and scare me. :)
